This single-origin Ethiopian whole-bean coffee was sourced from small farm holders in the beautiful Sidama region. It's crafted for true coffee lovers, featuring a delicate body (2/5) and a medium acidity (3/5), ideal for those who enjoy a balanced, sweet, and smooth cup.

The Sidama region is known for producing the most coffee at the highest grades in Ethiopia, and geography explains why. This region spreads across fertile highlands, where half of the land is cultivated.

The surrounding rivers and lakes along with the very high elevation results in cool weather and fertile soil. These factors, in combination with over 100 inches of rainfall per year, cause the coffee to ripen slower than in any other region in Ethiopia. There are over 50 cooperatives and 200 washing stations throughout Sidama.

This Ethiopian coffee features the heirloom varieties of the region and is processed using natural fermentation methods. This process enhances the coffee's inherent attributes, resulting in a well-balanced and sweet flavor profile with notes of jasmine, tropical fruits, and berries and a velvety smooth mouthfeel. After being harvested, "natural" coffee is typically delivered the same day and sorted for ripeness and quality.

The coffee is then rinsed to remove any dirt and debris before being spread on raised drying beds or tables. Throughout the drying process, the coffee is rotated frequently to ensure even drying. Depending on the weather conditions, the drying process can take anywhere from 8 to 25 days on average.
